Women Owned Special – Grillin’ & Chillin’

Grilling out by the lake or in the backyard is one of my favorite summer activities. What makes grilling out in the summer air even better? Using Women Owned products to support women entrepreneurs! Cantaloupe Mozzarella Salad

Prep Time: 15 min

Cook Time: 0 min.

Yields: 8 servings

Ingredients:

1 Frey Farms Cantaloupe

¾ lbs. Mozzarella Company Bocconcini (bite-size mozzarella balls)

¼ cup Fresh Mint Leaves (sliced)

2 tbs. olive oil

1/3 lbs. thinly sliced prosciutto (torn into bite-sized pieces)

Instructions:

Make melon balls or bite-size pieces of cantaloupe. Combine with fresh mint and mozzarella balls, toss in olive oil. Add prosciutto. Serve immediately.

Watermelon Caprese Salad

Prep Time: 15 min

Cook Time: 4 min.

Yields: 8 servings

Ingredients:

1 Frey Farms Watermelon

¾ lbs. Mozzarella Company Bocconcini (bite-size mozzarella balls)

¼ cup Fresh Basil Leaves (sliced)

1 tbsp. olive oil

Balsamic Vinegar glaze for drizzling

Instructions:

Slice watermelon into 1.5” slices, brush with olive oil and grill 2 min. each side. Slice grilled watermelon into cubes and toss the rind. Toss with fresh basil, ¾ lbs. mozzarella balls, and remaining olive oil. Drizzle with balsamic vinegar. Serve immediately.

Rainbow Veggie Kabobs

Prep Time: 30 min.

Cook Time: 12 min.

Yields: 8 servings

Ingredients:

4 cherry tomatoes

8 orange Southern Valley Grab & Go Mini Sweet Peppers

1 yellow squash from Southern Valley Grab & Go Squash Medley

1 zucchini from Southern Valley Grab & Go Squash Medley

1 red onion

¼ cup olive oil

1 tbsp. Heather’s Dirty Good Original Seasoning

8 kabob sticks

Instructions:

Layer halved cherry tomato, orange mini sweet pepper, 1” slice yellow squash, 1” slice zucchini, 5 slices red onion on kabob sticks. Mix seasoning and olive oil. Coat veggies with olive oil mixture and let sit 10-15 min. Grill skewers, turning occasionally about 10-12 min or until veggies are lightly charred. Serve immediately.

Sweet Tea Marinated Pork Chops

Prep Time: 8 hours

Cook Time: 12 min.

Yields: 8 servings

Ingredients:

8 pork chops

½ gallon Milo’s Famous Sweet Tea

4 tbsp. Fire & Flavor Classic Rub

2 tsp. minced garlic

2 tbsp. olive oil

Instructions:

Combine tea, seasoning, and garlic for marinade. Marinate pork chops for 8 hours. Remove pork chops from marinade. Brush pork chops with olive oil. Grill pork chops 6 minutes per side. Serve.
